Summer’s coming and I’m excited. Wicked excited. It’s been a bear of a winter around here. Fact is, spring just finally arrived here this past week. I can hear the tinkle of my wind chimes, and that make me happy. We’re finally outdoors more, eating lighter, perhaps wanting to BE a little lighter… (!)
A Blueberry Coconut Almond Smoothie is a refreshing way to eat (drink?) a nutritious, healthy snack or light meal with fewer calories than a sit down lunch or dinner. Smoothies also tide you over perfectly if you had a late brunch. Just enough to get you through without a big lunch or lots of carbs. I get it, because I’m doing that here too.
This Blueberry Coconut Almond Smoothie is light, refreshing and oh so tasty. Perfect for breakfast, the almonds, blueberries, yogurt and coconut milk make it super nutritious too! You’ll be whipping this up time and again.

Blueberry Coconut Almond Smoothie Recipe
Ingredients
- 1 1/4 cups frozen blueberries
- 1/4 cup plain Greek yogurt
- 1/2 cup light coconut milk
- 1 tablespoon sliced or slivered raw almonds
- 1 tablespoon unsweetened shredded coconut
- 1/2 cup water or more for consistency
- 2 ice cubes
- Optional: 1/8 teaspoon almond or coconut extract
Instructions
- Place everything in the blender and blend blend blend, adding more water if needed for consistency.
