Fresh basil is aromatic with the scents of pepper, anise, and mint. Sweet tasting but savory too, it smells peppery with a hint of mint!
So here I am in the middle of a kitchen remodel, sans oven, stovetop and kitchen sink or dishwasher. The crockpot’s getting old, as is the electric griddle and microwave. We’re making do, but I’m looking forward to having appliances and running water in the kitchen within the week. You don’t realize what an incredible blessing running water is until you don’t have it. Isn’t that the way it always is.
It’s the beginning of March and a Nor’easter just made its way up the East Coast and is hitting us hard right now. 12-18″ of snow is expected. And here I am dreaming of garden fresh basil and delicious spring and summer recipes. The nice thing is, fresh basil is available year round in the grocery store these days. So if you’ve got running water and a stove top or oven (lucky you!), no need to wait on summer for fresh farm to table eats.

Basil is absolutely my favourite herb! I am hoping to grow a bunch of it this summer in my new greenhouse. Cannot wait. I make a tomato pie that you have me dreaming of now and the star of the show in that tempting plateful is the basil. Have you ever made tomato pie? Absolutely worth every bit of effort put into it!

Hi Carol – Super to hear from you. A new greenhouse, huh? How exciting!! You are gonna have all kinds of herbs and tomatoes this summer. Tomato pie? My mouth is watering already….I’ve not ever made tomato pie. Sounds divine. I do have a savory summer pie here on the blog that incorporates tomatoes and basil, but it’s more of a quiche. So the reno is COMING!!! It’s sort of the kitchen of my dreams, but when you start getting into this remodel stuff you know how expensive it gets. I did have to rein it in some. As in, I do have a budget, and so that held me back on a few things. But I had time on my side and did a lot of price comparison shopping and checked ratings/reviews. Really helped to keep costs down. I’m very excited and hope to post all the kitchen pics once everything is finished. Loved hearing from you Carol, have a great weekend!

Ripen avocados by sticking them in a brown paper bag..close it up and set it aside for half a day or better. No flour required!!
