When spring finally arrives, it’s the perfect time to enjoy the elusive fresh herbs and produce we’ve been craving all winter long. These pretty and delicious spring appetizers are beautiful on the table for spring parties and showers. Or just because!
Winter can feel interminable here in New Hampshire. Even when the calendar declares that spring has sprung, it doesn’t necessarily mean it feels a bit like spring outside. Often we still have powdery white stuff on the ground in March. Hard to believe. So when April rolls around and we’re finally seeing the magical signs of spring appear, like tender green shoots and delicate buds, we get all excited. Hello spring!
You may remember our family hatched a monarch butterfly last spring at the kitchen counter. I witnessed its first laborious flight across my kitchen, and then we set it free outside. Our intelligent, freshly-hatched monarch flew straight to my herb planter by the side door that was overflowing with green: sage, parsley, rosemary, dill and cilantro. Monarchs instinctively know a good thing, that’s for sure. And so do I.
I always love using fresh herbs in my cooking whenever I can. Fresh lime juice, cilantro, white beans, avocado and feta combine for a delicious and colorful spring appetizer topping for RITZ Crackers.
While shopping for spring cards at Target last week, I spied the RITZ Crackers display. I like to keep them on hand for quick last minute snacks and appetizers. #Truth: I have to hide the box in my pantry if I need them for company. (Because my boys all love RITZ Crackers too!) I grew up with RITZ Crackers and they’re a delicious, crunchy base for all my Spring Appetizers.
This appetizer is so easy to put together. Combine all the fresh ingredients in a mixing bowl and spoon onto RITZ Crackers. Garnish with cilantro and serve immediately!
White Bean Lime & Avocado Dip
Ingredients
- RITZ Crackers
- 1 can white corn drained
- 1 can white beans drained and rinsed
- 3 ounces crumbled feta cheese
- 1/2 red onion diced
- 2 ripe avocados chopped
- 2 tablespoons fresh lime juice
- scant 1/8 cup sugar
- 2 tablespoons olive oil
- 2 tablespoons white vinegar
- 2 tablespoons chopped cilantro or more
Instructions
- Combine all ingredients and serve immediately on top of RITZ Crackers.
- Garnish with fresh cilantro if desired.
- Cover tightly and refrigerate leftovers.

The weather here is pretty wonky too, Allie. Although we haven’t had snow on the ground, it has been touch and go with spring-like weather! I can’t wait until it is officially spring 24/7, but I know with that will come summer… and I’m not really looking forward to all that heat (and sweat!). The grass is always greener, right?! Speaking of green, fresh herbs are definitely the best! And I’m loving this easy spring app!! So simple, but packed with yum! I could definitely eat a platter of these!! Who knew monarchs were so smart? I’d fly straight into an herb planter if I were a butterfly :). These look sooooo good Allie! Ritz crackers are one of my favorites–anything buttery is my jam. And then you add feta and avocado and white beans? Just yes yes yes! I’m going to be dreaming of these little bites of heaven tonight!

Yum yum yum. I would have eaten the beans as a salad, but adding them to ritz crackers takes them to a new level. So delish.

My daughter LOVES Ritz crackers too and would eat a whole sleeve by herself – which would give your boys some serious competition in the Ritz cracker eating department! But, I’d much rather enjoy Ritz in this appetizer form! Allie – I so love your combo of corn, beans, feta cheese, and avocados on Ritz – such a delightful appetizer – though I’d be tempted to eat as many as I could and call it dinner – not too bad an idea eh?!
