Hi friends, it’s that time to start thinking about Christmas baking and I’ve got an easy new recipe to share for No Bake Peppermint Bark Cookies. I’ve got a lot of old stand-by recipes I love to bake each year, Peppermint Bark being one of them. My kids love the stuff and we have all kinds of stories related to peppermint bark through the years. How the peppermints got crunched. (Or didn’t.) Peppermint bark gone missing. You name it, we’ve got a story related to Peppermint Bark. There’s just something irresistible about melty chocolate and crunchy peppermints that go together at Christmas.
I was thinking it would be fun to create a simple cookie for the holidays similar to peppermint bark but with a chocolate cookie crunch. Also one that doesn’t need refrigeration, as my peppermint bark recipe does.
This recipe is so easy. Just spread melted chocolate on both sides of store-bought chocolate cookie wafers. Frost with peppermint buttercream frosting and sprinkle with crushed peppermints. And just like that, you are….DONE! Yup, told you it was easy peasy.
Easy No Bake Peppermint Bark Cookies make a nice presentation on the Christmas cookie platter, also perfect for holiday cookie exchanges and gifting.

No Bake Peppermint Bark Cookies
Ingredients
Cookies
- 1 package Nabisco Famous Chocolate Wafers 40 wafers
- 2 cups semi-sweet chocolate chips
- Crushed peppermint candies or candy canes
Peppermint Buttercream Icing
- 1/4 cup butter room temperature
- 2 cups powdered sugar
- 1 teaspoon peppermint extract
- 2-3 tablespoons half and half or cream
Instructions
Cookies
- Melt chocolate chips according to package directions.
- With a pastry brush, brush one side of chocolate wafers with melted chocolate.
- Let dry.
- Flip over chocolate wafers and brush with melted chocolate on the other side.
- Let dry.
- Frost with Peppermint Icing.
- Sprinkle with crushed peppermint candies.
Peppermint Icing
- Beat butter 'til light and fluffy.
- Cream in powdered sugar.
- Beat in vanilla and enough half and half or cream for the spreading consistency you like.
